Asam Pedas

Aduh sampai dah bersawang dah blog resipi ni. Betul hangat-hangat tahi ayam rupanya aku ni. Memanglah aku terlalu sibuk kat rumah, jadi bila masak tu kalau hari kerja yang senang-senang saja lah. Jadi hari ni nak post reispi yang senang yang menjadi kegemaran keluarga. Aku rasa setiap negeri ada masakan ni dan dari yang aku dok tanya-tanya sana sini tu, rasanya cara memasak Asam Pedas kat mana pun lebih kurang serupa saja. Anak-anak aku kalau aku masak Asam pedas diorang makan dengan mee segera. Mee segera sama ada di masukkan dalam kuah asam pedas yang panas tu, atau dicelur dulu. Memang sedap pun.

Bahan-bahan

1 kg ikan kembung (aku selalu buat dengan ikan kembung)
11 biji cili merah (kata orang kalau nak pedas mesti kuantiti yang ganjil)
Belacan
6 - 7 ulas bawang merah
3 - 4 ulas bawang putih
1 batang serai
1 genggam daun kesum
1 tangkai bunga kantan
1 genggam (10 - 15 keping) asam keping (boleh di substitute dengan air asam jawa)
sedikit serbuk kunyit atau 1/2 inci kunyit hidup
Garam secukup rasa.

Cara-cara memasak

1. Bersihkan ikan
2. Blend cili merah, bawang dan belacan
3. Masukkan ikan ke dalam periuk, masukkan bahan yang telah di blend
4. Masukkan air sebanyak mana yang rasanya mencukupi sebagai kuah (kat rumah kami kuah kena banyak sebab nak di makan dengan mee segera tu :-) )
5. Masukkan asam keping, serai yang di titik, bunga kantan dan daun kesum
6. Masak semua bahan-bahan yang telah berada di dalam periuk sehingga mendidih.
7. Kalau suka boleh jugak di tambah bendi ke dalam asam pedas ni.

Senang sangat rasanya nak buat ni. Cuba lah sekali makan dengan mee segera tu. Kalau nak lebih kick masukkan perencah mee segera tu sekali ke dalam kuah tu. Kalau tak campurkan perencah mee segera tu pun tak apa. Memang dah sedap pun.

Yes, resepi ni untuk masak asam rebus. Kalu masak asam melaka, tumis dulu bahan kisar. Tidak perlu daun kesum and kantan, cuma daun limau purut.
